I find that the 21 has a little heavier trigger pull than the 30, which may be a characteristic of this gun only. However, I find them both about equally accurate. I do most of my dryfiring with the 21 because of the heavier trigger pull.

If you were to take the G19 and throw on a slide that was as blocky as the standard G30 slide, trust me, you'd definitely notice a difference (at least most of us would).If you want good carry pieces for concealed self defense, the 19 or 30 are great choices. If you want something for the trail, the 30 or the 20 get the nod, with a preference for the 30. I have the non-SF versions of all three handguns, and they are all highly reliable.
